Batata Bhujna – Pathare Prabhu Style

Ingredients

  • 3 round potatoes, peeled
  • 1 large onion
  • 1 tsp ginger-chilli paste
  • Fresh coriander leaves, chopped
  • ½ tsp turmeric powder
  • A pinch of hing (asafoetida)
  • Salt, to taste
  • ½–1 tsp chilli powder (adjust to taste)
  • 2–3 tbsp oil
  • Water, as needed

Method

  • Prep vegetables: Peel and cube the potatoes. Slice the onion.
  • Cook base: Heat oil in a pan, add ginger-chilli paste and sauté for a minute.
  • Add spices & onion: Mix in the turmeric, hing, chilli powder, salt, and chopped coriander. Add sliced onions and stir well.
  • Cook potatoes: Add the potatoes and stir until coated with the spice mixture.
  • Simmer: Pour in enough water to cover the potatoes. Let it boil, then reduce heat and simmer until the water reduces and potatoes are cooked through. Add a little more water if needed for a soft, gravy-like consistency.
  • Finish: Check seasoning and adjust if needed.
  • Your Batata Bhujna Pathare Prabhu style is ready! Serve hot with chapati or rice.
