Batata Bhujna – Pathare Prabhu Style

Ingredients
- 3 round potatoes, peeled
- 1 large onion
- 1 tsp ginger-chilli paste
- Fresh coriander leaves, chopped
- ½ tsp turmeric powder
- A pinch of hing (asafoetida)
- Salt, to taste
- ½–1 tsp chilli powder (adjust to taste)
- 2–3 tbsp oil
- Water, as needed
Method
- Prep vegetables: Peel and cube the potatoes. Slice the onion.
- Cook base: Heat oil in a pan, add ginger-chilli paste and sauté for a minute.
- Add spices & onion: Mix in the turmeric, hing, chilli powder, salt, and chopped coriander. Add sliced onions and stir well.
- Cook potatoes: Add the potatoes and stir until coated with the spice mixture.
- Simmer: Pour in enough water to cover the potatoes. Let it boil, then reduce heat and simmer until the water reduces and potatoes are cooked through. Add a little more water if needed for a soft, gravy-like consistency.
- Finish: Check seasoning and adjust if needed.
- Your Batata Bhujna Pathare Prabhu style is ready! Serve hot with chapati or rice.
